Tomato Soup Cake – Wow!
Yes that’s right, you read it correctly, Tomato Soup Cake!!! It may sound a bit odd and people always look at you bizarrely when you serve the cake, but trust Aunty Pauline, this is delicious and great fun when you watch people’s faces light up as they take a bite.
This is a great and simple recipe given to me by my dear (and sometimes nutty 😉 friend from the Hash. For those of you not familiar with the Hash, it’s a running group started out in what is now Malaysia in 1938. It takes the format of a group of runners “the hounds” chasing a couple of “hares” who run ahead and lay a trail for the group of runners to follow. The runners then have to find the trail and try to catch the hares. It’s a fun way to exercise and there were family runs on the weekends, but the downfall is at the end when you literally have to down, down a few beers (not the kids of course)! 1 Cup brown Sugar
½ Cup Butter
½ Teaspoon each of Cinnamon, Cloves, Nutmeg
1 Teaspoon Baking Soda
1 Tin Tomato Soup (Heinz large tin)
2 Cups Chopped dates
1 Cup Walnuts
1 Cup Plain Flour
1 Teaspoon Vanilla
Prep & Cooking Guidance
Beat the eggs and sugar together. Mix in the rest of the ingredients and pour into a rectangular baking tin.
Pre-heat the oven to 180c / 350f / Gas Mark 4 and bake for about 50 minutes.
