Strawberry Shortcake Recipe
Ingredients
350g of plain flour
1 1/2 tsp baking powder
75g butter or flora
50g caster sugar
2 eggs
4 tbsp of milk
Filling:
Whipped Cream carton
Strawberries jam
Prep & Baking Guidance
Preheat Oven at 180*C (Fan)
- Combine baking powder, flour and sift together
- Add sugar, butter and mix together
- Whizz ingredients until the mixture resembles fine bread-crumbs
- Beat eggs and add to the butter and flour mixture
- Use a knife to cut in the eggs and stir
- Add milk and mix
- Flour the surface of a clean bench
- Work the dough and kneed gently
- Roll the dough and create a 20cm diameter and 1 ½ cm thick circle
- Transfer the dough to a greased floured tray
- Brush it with milk
- Bake at 180 c (Fan) for 25-30 minutes
- Once baked, leave to cool on wire rack
- Cut in half and spread jam on bottom layer
- Whip the cream and add it on top of the cream.
- Put the other half of the baked dough on top (like a sandwich)
- Sprinkle with icing sugar
- Add 2x halved strawberries on top as a garnish
