Sour Cream Coffee Cake Recipe
I love this sour cream coffee cake recipe when it’s time for a coffee break. It reminds me of child free coffee mornings with all my girlfriends when the kids were at nursery.
Hooray…….! It also reminds me of aerobics class in Taiwan, because it was given to me by the aerobics teacher. An aerobics teacher with a heart and a sweet tooth!
½ Cup Margarine or Butter
1 Cup Caster Sugar
2 Cups Plain Flour
1 Teaspoon Baking Powder
1 Teaspoon Baking Soda
¼ Teaspoon Salt
1 Cup Sour Cream
1 Teaspoon Cinnamon
1/3 Cup Sugar
Prep & Cooking Guidance
Cream butter and sugar; add eggs and vanilla. Beat well. Sift dry ingredients together and add to creamed mixture alternatively with the sour cream. Mix together the cinnamon and sugar.
Grease a round cake tin or a savarin mould (tin with hole in the middle). Pour in half the batter then sprinkle over half the cinnamon and sugar mix. Top with the rest of the batter and sprinkle over the remaining cinnamon and sugar.
Bake in a pre-heated oven at 180c / 350f / Gas Mark 4 for about 40-45 minutes. Cool on wire rack. The sugar and cinnamon mix in the centre of the cake can be replaced with strawberry jam if liked.
