Pineapple Toffee Dessert Recipe

How To Make This Pineapple Toffee Dessert Recipe


350g Self raising flour
175g Flora margarine or butter diced
2 eggs
2 tbsp milk
1 large can of pineapple


110g Flaked almond
75g Sugar
50g Butter
1 tbsp milk

Prep & Cooking Guidance

Preheat oven 160 C and grease a 11”x14” baking tray

  1. Sift flour into a large bowl, add diced butter. Using a knife lightly cut the butter into the flour. Using a hand mixer or your fingertips combine until resemble fine breadcrumbs
  2. Add egg and milk and mix
  3. On a floured surface knead dough and divide in two parts
  4. Roll half dough with help of a rolling pin creating a rectangular shape to fit the baking tray size. Transfer the pastry to the tray. Reserve the other half dough
  5. Drain and squeeze the liquid from the pineapple can and spoon it over the pastry on the tray
  6. Roll the other dough and put over on top of the pineapple. Fit the spaces with the size pastry dough excess
  7. Into a medium side pan add butter, almond flakes, sugar and milk and cook for 2-3 minutes until butter is melted
  8. Spread this mixture over the pastry covering all very well
  9. Oven cook for 30-35 minutes until golden and crunchy
  10. Cut in squares and enjoy with custard cream or ice cream
