Pepperkaker Gingerbread Recipe

This Pepperkaker Gingerbread Recipe is a great one for Christmas cookies whether you’re Swedish or not. 

Note: This dessert should be prepared the night before baking and serving.

We met a real mixture of nationalities on our travels and where ever we were, we celebrated each other’s customs and recipes.  It was great at Christmas because we had a month of celebration.  Swedish people start early as do the Norwegians.  We have the 25th of December and the Spanish take the party into January.  The children loved it and they got to dress up and discover lots about the customs of their international friends.

Recipe

Ingredients

1 ½ Cups Sifted Plain Flour

1 Teaspoon Baking Soda

1 ½ Teaspoons Ginger

1 Teaspoon Cinnamon

¼ Teaspoon Clove

Sift together all of the above.

½ Cup Butter

¾ Cup Caster Sugar

1 Beaten Egg

1 ½ Teaspoons Dark Corn Syrup (Treacle or Golden Syrup)

Prep & Cooking Guidance

Cream the butter and sugar together. Add the beaten egg and dark corn syrup (treacle or golden syrup). Add the sifted dry ingredients and mix into a dough.  Chill in the refrigerator overnight.

Roll out very thinly on a floured board and cut out Christmas shapes. Bake on un-greased baking tray in a pre-heated oven at 180’c / 350’f / Gas Mark 4 for about 10 minutes.
