No Bake Peanut Clusters
For anyone who loves toffee and nuts these no bale peanut clusters are delicious. Taiwan was where we had our first taste of Peanut Butter. The American kids loved it. Peanut Butter and Jelly or jam as the Brits know it became a staple in my kids’ lunch box. I figured out why they use the jelly. 1 Cup Sugar
2 oz (50 g) Chunky Peanut Butter
2 oz Butter
½ Teaspoon Vanilla
1/3 Cup (80 ml) Evaporated Milk
1 Cup (92 g) Rolled Oats
½ Cup (55 g) Peanuts (Unsalted)
Prep & Cooking Guidance
Mix the sugar, butter and milk in a saucepan. Bring to a rolling boil stirring frequently over 4 minutes until the mixture is caramel coloured.
Remove from the heat and stir in the peanut butter and vanilla. Mix in oats and peanuts. Drop Teaspoonfuls onto grease proof paper. Leave to set. Makes about 30 servings.
