OK, full disclosure. We changed the name of this cake to make it PG. 🙂

This is one for the girls.  We used to hoot with laughter when our American girl friend used to turn up with this cake.

But beware, if the boys get their hands on it, there won’t be any left. It’s to die for! So easy –peasy!

Recipe

Ingredients

450g Cake Mix (you can make this yourself of buy a cake mix – the yellow cake mix by Betty Crocker works very well)

1 Large 20 oz (500 g) Can Crushed Pineapple

1 Cup Sugar

1 Cup Chopped Pecans or Walnuts (or Mixed)

½ pint (300m) Vanilla Custard – you can make your own or use a ready-made pot of vanilla custard (e.g. Ambrosia)

1 Cup Coconut

1 cup whipped cream

Prep & Cooking Guidance

Bake cake in a 9 x 13 in (30 x 33 cm) tin. If you’re using bought cake mix bake as shown on the packet. If you prefer to make your own cake there is a quick cake recipe at the beginning of the book.

Simmer pineapple and sugar until half the liquid has gone. Poke holes in the hot cake. Pour pineapple over. Cool. Mix coconut into ready-made cold custard. Spread over cake.

Top with whipped cream chopped pecans or walnuts.
